Brunch is definitely my favorite meal. While I am always up to go out for brunch, I love when we have the time to make and enjoy our own at home too. One of my favorite (and super easy) breakfast foods to make is a baked oatmeal. You can add so many different ingredients to it and it always turns out yummy. Today I’m sharing a new fall favorite with apples, cinnamon and raisins! This weekend may have come to an end, but I hope you’ll save this recipe for the next weekend you have time to make a delicious fall-inspired breakfast!

You will need:
- 2 cups oats (I use Quaker)
- 1 and 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- 3/4 cup raisins
- 2 cups diced, peeled apples
- 3 eggs
- 2 cups milk (I used Vanilla Almond Milk as it was what I had in the house)
- 1/2 teaspoon vanilla extract
- 3 tablespoons light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
To make:
Preheat your oven to 325 Degrees F. Spray your baking dish with nonstick spray
Mix together oats, baking powder and salt in a large bowl. Add to the oat mixture the apples and raisins.
Whisk together the eggs, milk, vanilla, brown sugar, cinnamon and nutmeg in another bowl.
Pour the egg/milk mixture over the oats and stir combine.
Pour it all into your baking dish and bake for 1 hour (or until it looks golden brown).
