Almonds, chocolate chips and coconut come together to bring that Almond Joy flavor you know and love to cookies!

My dad’s favorite has always been Almond Joys. Whenever we came home from trick or treating on Halloween, we’d always check our bags for any Almond Joys to give to Dad. So when it was his birthday earlier in January, I knew I wanted to try to make something for him that involved his love of Almond Joy. Enter these Almond Joy Cookies!
The flavors of almond and coconut are very prevalent in this cookie recipe, with shredded coconut, slivered almonds, almond extract and coconut flavor. Each bite tastes just like an Almond Joy. I think I can easily say these were one of my dad’s favorite birthday surprises!

You’ll Need:
Makes 1 and a 1/2 Dozen Cookies
- 1/2 cup butter (1 stick)
- 1/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 2 teaspoons coconut flavor
- 1 teaspoon almond extract
- 1 and 1/4 cup flour
- 1/2 teaspoon baking soda
- 1 cup semi-sweet chocolate chips
- 1 cup sweetened, shredded coconut
- 1 cup unsalted slivered almonds
To Make:
In a stand mixer or using a hand mixer, combine room temperature butter, sugar, brown sugar, egg, coconut flavoring and almond extract until well combined. You want the mixture to be creamy.
Gradually add in the flour and baking soda. Mix well on medium speed.
By hand, stir in chocolate chips, coconut and almonds until evenly distributed throughout dough.
Refrigerate dough for at least one hour in a covered bowl.
Pre-heat oven to 350 Degrees.
Scoop dough using a medium cookie scoop or tablespoon onto cookie sheets lined with parchment paper. Keep dough chilled that is not being scooped.
Bake at 350 Degrees for 10-12 minutes. Keep an eye on the cookies as coconut browns easily.
Allow to cool completely before placing in a container.
Take a bite and enjoy your Almond Joy cookie style!
