Crockpot Buffalo Chicken Sliders

 

Shredded chicken covered in buffalo sauce and topped with celery and crumbled blue cheese make for a delicious game- time snack.

One week from today is Super Bowl Sunday! Besides being pumped to see the Patriots play in the big game, I always look forward to watching the game with friends and eating too much food. I’m also partial to the Puppy Bowl; is there anything cuter?

Buffalo wings are probably the most popular football food. My Buffalo Chicken Sliders, prepared in your slow cooker, have the buffalo sauce flavor you love, with crumbled blue cheese and sliced celery in a snack size sandwich. Plus they are much cleaner to eat than your typical wing, making these sliders a welcome addition to your Super Bowl spread! The recipe below makes 12 slider sandwiches.

You’ll Need:

  • 2 pounds chicken breast
  • 1 cup chicken broth
  • 1 cup water
  • 1 cup buffalo sauce (I use Frank’s)
  • 12 slider or small sandwich rolls (I used small potato rolls)
  • 6 celery stalks
  • Crumbled blue cheese

To Make:

Place the chicken breast in your slow cooker.

Pour chicken broth and water on top of chicken to cover.

Cook on high for 3 hours.

After 3 hours, remove chicken from slow cooker. Reserve 1/2 of a cup of the broth leftover on the side.

Using two forks, shred the cooked chicken.

Place shredded chicken back into slow cooker.

Pour buffalo sauce over the chicken and stir to coat all of the chicken. Add some of the reserved broth if desired for extra moisture- only use if you think you need more moisture.

Cook on high for 30 minutes.

While cooking, chop or slice celery into small pieces to top sliders.

Remove chicken from slow cooker.

Place desired amount of chicken on roll, top with celery and desired amount of blue cheese.

    I am not a Super Bowl fan, so while my husband watches with friends, I usually watch a movie and have a relaxing night in.
