Happy Friday!
If your weekends look anything like ours, a good portion of your Sunday is spent watching your favorite football team. While I like watching Tom Brady as much as the next girl, most of the time I’m really in it for the excuse to make and eat lots of football snacks! Texas Caviar is the perfect dip for during the game. This recipe of my mom’s mixes green peppers, red peppers, two types of beans, corn and onions. The recipe makes an awesome salsa to pair with chips, but it is so versatile beyond that- I’ve used it on top of grilled chicken, fish and in salads.

You’ll Need:
- 1 can black beans
- 1 can black eyed peas
- 1 can shoepeg corn (You can also use fresh corn if in season)
- 1 red pepper
- 1 green pepper
- 1/2 red onion
- 1/4 cup of splenda
- 1/2 cup of apple cider vinegar
- 1/2 cup of canola oil
To Make:
Drain and rinse black beans and black eyed peas. Add to large mixing bowl.
Drain corn and add to bowl.
Chop red pepper, green pepper and red onion into small pieces and add to mixing bowl.
Mix vegetables and beans well.
In a small bowl, combine splenda, vinegar and oil. Mix well.
Add the dressing to the bowl and stir will to coat evenly.
Allow to marinate for a few hours before serving.
