You’ll Need:
- Â Two large sweet potatoes
- One large apple (your favorite for baking)
- 1/2 cup of cranberries.
- 2 tablespoons olive oil
- 2 tablespoons ground cinnamon
- Salt to taste
To Make:
Pre-heat your oven to 400 Degrees. Prepare a baking dish by spraying with non-stick cooking spray.
Peel your sweet potatoes and cut into evenly sized chunks.
Thinly slice the apples.
Wash, drain and dry the fresh cranberries.
Add half of the potatoes, half of the apples and half of the cranberries into the baking dish. Drizzle with 1 tablespoon olive oil and 1 tablespoon cinnamon.
Repeat with second half of the sweet potatoes, apples and cranberries. Drizzle with olive oil, cinnamon and also add salt to taste.
Bake in oven for 55 minutes until well roasted.
