Juicy pears and pomegranates, crunchy walnuts and tangy feta top a massaged kale salad for a healthy meal to get you through the winter season.
Tis the season… for treats wherever you go. From holiday parties to the office, it seems everywhere I go lately there are tons of sweet treats calling my name. Since I’ve never been one to have much will power (serious sweet tooth over here!), I was really feeling like I need to add some healthy foods into my life to counteract all the desserts. Enter this Pear and Pomegranate salad! It’s just what the doctor ordered!
The recipe below makes four servings. I didn’t add any additional dressing because of massaging the kale in olive oil, but feel free to add your favorite dressing if you would like. If you’re looking for a healthy meal this season, I hope you’ll consider this delicious salad!

You’ll Need:
- 6 cups kale
- 2 tablespoons olive oil
- 3/4 cup pomegranate seeds
- 1 Bartlett pear
- 1/2 cup feta cheese
- 1/3 cup chopped walnuts
- Salt to taste
To Make:
Chop kale into bite size pieces or ribbons, removing from ribs.
Place kale into a bowl. Drizzle with the olive oil and add salt to taste.
Massage the kale, about 3-5 minutes. If you haven’t massaged kale before, literally, just rub the kale with your hands. The kale will become shiny and soft after massaging. This really helps bring out a softer flavor of the kale for your salad.
Remove pomegranate seeds from pomegranate using your favorite method (I like removing mine in a bowl of water to eliminate some of the mess).
Add pomegranates to the kale and toss.
Add the feta and walnut to the salad and toss.
Thinly slice the pear and arrange on the top of your salad to serve.
