Peanut butter and banana are a match made in heaven in this make-ahead recipe perfect for a week day breakfast!

I’m definitely a morning workout person. I like getting my exercise in first thing so I don’t have to think about it all day or come up with some excuse to skip at the end of the day. Because I get my sweat on early on, it’s great to have a breakfast that I can easily make ahead to grab and go. Overnight Peanut Butter and Banana Oats are made the night before, are delicious and filled with protein to help you power through the morning. The recipe below makes 1 serving, but you can double or triple because the oats stay good in an air tight container for up to three days.
By the way, I also wanted to let you know, I’m going to be changing up my posts a bit for the next few months. I’m back finishing my MBA part-time after being off for our wedding festivities last semester. You’ll Need:
Makes 1 Serving
- 1/2 ripe banana
- 1/3 of a cup old fashioned oats
- 1/2 teaspoon ground cinnamon
- 1/3 cup unsweetened vanilla almond milk
- 1/2 teaspoon honey
- 2 tablespoons creamy peanut butter
- Additional sliced banana to top, if desired
To Make:
In a small bowl, mash the ripe banana.
Add oatmeal, cinnamon and almond milk to bowl. Mix to combine.
Add peanut butter and honey to bowl and mix well. This can be hard with the peanut butter, so you may have to put some muscle into it 🙂
Pour the mixed oats into a mason jar, tupperware or other airtight container.
Refrigerate the oats overnight.
Remove from fridge, stir oats, add additional sliced banana if desired and enjoy your delicious breakfast!
