Kale Caesar Salad -Boston Chic Party

Massaged kale topped with a greek-yogurt caesar dressing, grape tomatoes and Parmigiano Reggiano make for a delicious salad for staying on track this January.

Is it just me or does anyone else have certain meals you eat for dinner when your other halfย isn’t home? I call them my single lady dinners. One of my favorite single lady dinners is a Kale Caesar salad from Sweetgreen. It’s my absolute fave salad! Don’t let me fool you, I have many other single lady dinners in my repertoire that include omelettes and Annie’s Mac and Cheese ๐Ÿ™‚ I know MJD has his favorite single guy dinners too with his favorite being pizza from Picco.

Since I love the Kale Caesar at Sweetgreen so much, I was inspired to try to make my own version at home. That way I can have my fave single lady dinner whenever I want! The recipe below makes two large salad servings or four side salads- just in case you aren’t eating alone ๐Ÿ™‚

Kale Caesar Salad -Boston Chic Party

You’ll Need:

  • 1 bunch of kale
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup grape tomatoes
  • 1/3 cup shredded Parmigiano Reggiano
  • Greek Yogurt Caesar Dressing to taste, inspired by Skinnytaste
    • 1/3 cup grated Parmigiano Reggiano
    • 2 tablespoons lemon juice
    • 1 clove garlic
    • 1 teaspoon dijon mustard
    • 2 anchovy filets packed in olive oil
    • 1 tablespoon extra virgin olive oil
    • 6 tablespoons plain greek yogurt

To Make:

Prepare dressing by placing grated cheese, lemon juice, garlic, mustard and anchovy in food processor. Mix for about 30 seconds. Add in olive oil and greek yogurt and mix for additional 20 seconds.

Cut tomatoes in half and place in salad bowl.

Cut kale into bite size pieces and remove from rib.

Massage kale with 1 tablespoon of olive oil for about 3 minutes until softened.

Place kale into salad bowl with tomatoes and Parmigiano Reggiano.

Toss with dressing as desired and enjoy!

    I have a kale Caesar recipe that I am about to post this week! For some reason I have recently been obsessed with this salad and all variations!
