Strawberries soaked in balsamic vinegar top smooth goat cheese spread onto crostini for an appetizer that is equal parts delicious and beautiful.

Woohoo! We made it to Friday, everyone- TGIF!

The week after a long holiday weekend is always tough getting back into the swing of things. And even more so when the long weekend was spent relaxing on the beach, eating too much food and drinking some of summer’s best beers ! We spent our Fourth of July in New Jersey where my parents have a beach house in a tiny barrier island called Brigantine. This weekend has definitely become a highlight of the summer for our whole family. It’s the one weekend where we all are there, which is somewhat of a miracle with everyone’s schedules.

To mix things up this year, we took some of our favorite beach weekend games and made them into a weekend-long family competition, that included different events like bocce, beer pong, our favorite card game and golf.  Unfortunately, MJD and I did not fare too well in this competition, despite him completely cleaning up at golf. Since I was stinking it up in the competition, I focused my energy on the food more and prepared this delish Balsamic Strawberry and Goat Cheese Crostini as an appetizer one night. My entire family assured me I would win the appetizer making contest if there was one. I’m pretty sure they were only saying that because it wasn’t an actual competition though 😉

Either way, my Balsamic Strawberry and Goat Cheese Crostini will surely be a hit at your next summer party! Say goat cheese or crostini and I’m completely sold. Now combine the two, plus add strawberries? Yes please! The strawberries are marinated in a mixture of balsamic vinegar, honey and brown sugar making a sauce that’s both acidic and sweet. This appetizer comes together beautifully, requires only a little bit of time for preparation and goes great with champagne! Don’t worry, I did the hard work of making sure it paired with champagne for you 😉

You’ll Need:

Makes 24 crostini

To Make:

Pre-heat oven to 375 Degrees F.

Thinly slice half a baguette into 24 pieces.

Place on prepared baking and brush lightly with olive oil.

Bake for 10 minutes or until bread is golden and crispy. Remove from oven, allow to cool.

Thinly slice strawberries and place in medium mixing bowl.

Next add balsamic vinegar, honey, brown sugar and chopped basil to strawberries.

Mix gently.

Place balsamic strawberry mixture in refrigerator for at least 30 minutes.

When ready to prepare, spread goat cheese on each crostini.

Top goat cheese with balsamic strawberries and sprinkle with any remaining basil.

Place on platter and enjoy!
