Add summer peaches and almonds to a French toast bake for a breakfast you’ll enjoy all summer long.

I’m super excited for this weekend- my mom is in town and we have a fun-filled Boston weekend planned. We kicked things off last night at the Billy Joel concert at Fenway. I’ve seen Billy Joel a few times before and he is always amazing. But  seeing him at Fenway with my mom made it even better! He’s one of my favorite artists of all time and I grew up loving his music thanks to my parents.

No weekend is complete without brunch and my Peach and Almond French Toast Bake is the perfect summer brunch recipe. I’ve talked about French Toast Bakes before and I absolutely love customizing them with the season’s flavors. By adding fresh peaches, almonds and brown sugar to the top of this casserole, you get a summery sweetness to your french toast. Try it this weekend and see for yourself!

You’ll Need:

Serves 4-6

  • 1 small French baguette
  • 6 large eggs
  • 1 cup skim milk
  • 1 teaspoon vanilla extract
  • 1/4 of a cup maple syrup
  • 2 fresh peaches, thinly sliced
  • 1/3 of a cup sliced almonds
  • 2 tablespoons light brown sugar

To Make:

Prepare a baking dish by spraying with non-stick spray.

Cut baguette into cubes and place in baking dish.

In a medium mixing bowl, whisk together eggs, milk, vanilla extract and maple syrup until well combined.

Pour mixture over top of cubed baguette pieces evenly so all pieces are wet.

Thinly slice peaches and place into mixing bowl.

Mix peaches with almonds and 1 tablespoon of brown sugar and stir until combined

Place peach mixture over bread and arrange as you wish.

Sprinkle remaining 1 tablespoon of brown sugar over top.

Cover and place in refrigerator overnight or for at least 8 hours.

In morning, remove baking dish from refrigerator and pre-heat oven to 350 Degrees F.

Bake for 40-45 minutes.

Remove from oven, allow to cool 5 minutes and enjoy!

    Definitely tempting. I have 2 questions.
    Have you ever tried cinnamon sugar on top vs. the brown sugar and is the “sitting” for 8 hours needed? If so does it need to come to room temp before baking or just “wait” the 10 mins for the oven to heat up?
    French toast is a favorite of mine – my grandmother made the best – so I like this new spin.
    Thanks for your help on the questions.
