A refreshing salad for summer, filled with peaches, prosciutto, roasted almonds and blue cheese.
With the recent heat wave here on the East Coast, I’ve been trying to avoid the oven as much as possible. Our 700 square foot apartment is like a sauna as soon as it gets turned on! On these nights, it really limits your dinner options. Refreshing salads are on way I’ve gotten through the heat wave. Ice cream is another option… but definitely less healthy 😉 .
My Peach and Prosciutto Arugula salad is the perfect dinner to make when you don’t want to turn on the oven. It also would make a perfect side for a dinner party- it looks just as great as it tastes! The sweet and salty combination of peaches, prosciutto and blue cheese make for a delicious dish. The inspiration from this salad came from a salad Kate posted earlier this summer.

You’ll Need:
- 5 cups baby arugula
- 1/3 of a cup sliced almonds
- 1/3 of a cup crumbled blue cheese
- 2 fresh peaches
- 1/4 of a pound Prosciutto di Parma
- Olive Oil drizzle
To Make:
Thinly slice peaches and roughly chop prosciutto.
Place arugula into salad bowl. Drizzle with olive oil to taste.
Top with almonds and blue cheese. Toss well.
Top with sliced peaches and prosciutto.
Dig in and enjoy!
This looks so delicious. I love dinner salads when it’s hot out, and of course, anything grilled!
