Guys, how adorable are these ham & egg cups? Seriously the cutest!

When I was asked a few weeks ago about receiving a copy of The Perfect Portion Cookbook, I was instantly intrigued. The cookbook is described as being filled with favorite comfort food recipes, but uses a simple 100 calorie per serving method that makes it easy to enjoy the recipes and know where you stand. If you’ve been reading my blog for a while, you know I love good food and am not afraid to indulge in a sweet treat, but I also like living a healthy lifestyle and of course, want to look my best. It truly is all about balance for me. In reading through The Perfect Portion Cookbook, I loved the concept because it isn’t trying to restrict you from eating any of your favorite foods (think mac & cheese and brownies), but instead tells you exactly what serving size would equal 100 calories. There’s no guesswork and you know exactly what you are putting into your body.

Over the weekend, I had some time to make brunch so reached for the cookbook and gave one of the recipes- Baked Ham and Egg Cups- a try. The baked ham and egg cups were delicious! Not only that, but this recipe was very easy to put together- just line a muffin tin with ham, add in green onions, crack an egg in the tin, bake, sprinkle on some cheese and enjoy! The individual servings not only make it easy to know your portions, but I also love the idea of making the baked ham and egg cups when hosting brunch. How perfect would these be for Easter brunch? It would make serving your guests a total breeze and they’d look adorable on a serving tray!

Baked Ham & Egg Cups via The Perfect Portion- The Perfect Portion Cookbook Review- Spring Brunch Ideas- Boston Chic Party-5

You’ll Need:

Makes 4 ham and egg cups (100 calories each)

  • 1/8 of a pound thinly sliced ham
  • 2 tablespoons green onions, sliced
  • 4 large eggs
  • 2 tablespoons shredded cheddar cheese
  • Salt and pepper to taste
  • Nonstick cooking spray

To Make:

Preheat your oven to 375 F and prepare baking dish by spraying four cups in a muffin tray with nonstick cooking spray.

Place a slice of ham into each of the four muffin cups, pressing around the sides to cover and create a cup-like shape.

Evenly add sliced green onions to bottom of each ham-lined cup.

Crack one egg into each muffin cup, repeating until each of the cups has an egg in it.

Add salt and pepper to taste.

Bake for ten minutes.

After ten minutes, remove from oven and sprinkle each egg with shredded cheese.

Return baking tray to oven and bake for an additional five minutes or until cheese is melted and egg whites are baked.

Enjoy!

    I enjoyed this read so much being a nutritionist, glad to hear that others are spreading the word about how vital portion size control is. I also loved the recipe and cannot wait to try it out for me and my boyfriend.
