Tart cranberries and rich dark chocolate pair perfectly for a breakfast or afternoon treat that is delicious from Thanksgiving right through Christmas
It’s Thanksgiving week and if you are hosting this year, you may have already started some of your preparations. We aren’t hosting this year, but rather heading down to New Jersey on Tuesday to visit with my family. Once MJD andΒ I were engaged, we started doing our holidays together and since our families live pretty far apart (his in MA and mine in NJ), we switch off holidays. Thanksgiving with one family means Christmas with the other that year and then vice versa for the next year. It’s been working well for us so far π
While I definitely want to host a holiday for our families someday, I can only imagine the preparations that go into hosting a major holiday right now. If I am planning a party, I try to get as much done ahead of time as I can and I would guess this would be my same approach if hosting Thanksgiving or Christmas. Especially if you have guests staying with you as I’d want to focus on spending time together rather than in the kitchen the whole time.
If you have people staying over your home during the holidays, one easy thing to prep ahead of time is breakfast. This Cranberry and Dark Chocolate Breakfast Bread is a decadent breakfast treat that can be made ahead of time. Serve it with some fruit, coffee and even a quick scrambled egg for a simple breakfast that would be perfect from Thanksgiving morning right on through to Christmas. I am sure your visitors (or just you!) will love the cranberry and chocolate combo π

You’ll Need:
- Two cups all-purpose flour
- One cup light brown sugar
- 1 and a 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 large egg
- 3/4 cup whole milk
- 4 tablespoons unsalted butter, melted
- 1 cup fresh cranberries
- 1 cup dark chocolate chips
- Additional butter or cooking spray to grease pan
To Make:
Pre-heat oven to 350 Degrees F. Use butter or cooking spray to grease a 9×5 inch loaf pan
Melt four tablespoons of butter and place to side to cool.
In a mixing bowl, whisk together flour, brown sugar, baking powder, baking soda and salt until combined and any clumps dissolve.
Add milk, egg and melted butter to dry ingredients and mix until well combined.
Gently stir in cranberries and chocolate chips until evenly distributed in batter.
Pour batter into greased loaf pan, place loaf pan onto cookie sheet and place in pre-heated oven.
Bake for 55 to 60 minutes or until a toothpick placed in center of loaf comes out cleanly.
Allow to cool on loaf pan for at least 30 minutes before removing out of loaf pan.
Slice once cool to touch.
