Green Smoothie Bowl

Only a few days left in January so figured it was about time to check in how those resolutions are going. Besides kicking off the year with a no shopping spree (read about my Style My Closet Challenge here), I took the start of the new year as a great time to reset and get on track with healthy eating and a set workout routine. Thanks to Classpass keeping up with my workouts has been super easy, but my sweet tooth and stomach have a mind of their own. I’ve definitely started to indulge a bit more, especially on the weekends. But life is all about balance, am I right?

Starting my day with a workout (total morning workout person) and a yummy, healthy breakfast usually set me up for a great day. My Green Smoothie Bowl is my fave way to do this- it’s a bit thicker so it fills you up, you can top it with yummy fruit or nuts and it is full of good for you ingredients! I spend more time putting on toppings than I do actually making the smoothie and the speed with which it comes together is also ideal for busy mornings. Eating a healthy breakfast never looked so good! Take the recipe below for a spin and let me know what you think 🙂

You’ll Need:

Makes two smoothie bowls

  • Two ripe bananas
  • 1/2 of a ripe avocado
  • 1 and 1/2 cups almond milk (I prefer unsweetened vanilla)
  • 3 handfuls baby spinach leaves
  • 2 tablespoons peanut butter
  • 5 ice cubes
  • Berries and nuts, to top

To Make:

In a blender, combine bananas, avocado, almond milk, peanut butter, spinach and ice cubes until smooth and well-mixed. Tip: place peanut butter directly into milk to make for easier blending.

Pour evenly into two bowls.

Top with berries, nuts or your favorite smoothie bowl toppings.
