Three Easy Italian Inspired Summer Appetizers with Primo Taglio and Shaw’s Supermarket

With Memorial Day weekend passing, it’s unofficially summertime here in New England. Things may be looking a little differently this summer (thanks Covid-19), but I for one am very excited for the nicer weather and to be able to spend more time outside. I love getting to have dinner outside and with our new backyard, eating outside on the patio has been a highlight! Last week we had a string of gorgeous days and I took the opportunity to try out some new summer appetizer ideas using Primo Taglio® meats and cheeses. Inspired by some favorite dishes when traveling through Italy, I used Primo Taglio prosciutto, parmesan and brie to make a Grilled Prosciutto, Parmesan and Arugula flatbread, Prosciutto Wrapped Cantaloupe and Watermelon Brie Bites. I love to have a bunch of different appetizers for dinner- it always makes for a fun, relaxing meal and is a good “date night in” for me and MJD because it switches things up.

In all three of the recipes, I used Primo Taglio quality meat and cheeses which can be found exclusively at and at a value in the New England area at Shaw’s Supermarket stores. Given the current state of things, I’m so happy that Shaw’s offers Grocery Delivery and DriveUp & Go™ for convenient ways to shop! We haven’t gone to a grocery store in months due to quarantining, so it feels great to have the option to get delicious items such as these without having to! Primo Taglio means first cut in Italian and so I knew the products would be delicious as ingredients in a very Mediterranean inspired array of appetizers. Primo Taglio prides itself on using traditional preparation methods for their products and you can taste this in each bite! All of the cheeses use the highest quality of milk and old world recipes, which allows some, such as the parmesan cheese I used in my recipe to be naturally aged for up to two years and creating a depth of flavor. While the prosciutto, parmesan and brie really shine in the recipes I created, they would be fantastic in any number of recipes or just to have on hand for a snack too. If you are located outside of the New England area, Primo Taglio can be found at any of the Albertsons Companies family of stores in your area, including Albertsons, Safeway, ACME Markets, Jewel-Osco, Vons, Randalls, Shaw’s Supermarket, Star Market, Tom Thumb and Vons.

A few things that I love about these recipes- they are easy to make, but thanks to great ingredients, they really stand out. They don’t require you turn on your oven at all which I think is a plus for the summer and they are light and refreshing, best enjoyed on a warm summer evening, with a glass of white wine or an Aperol Spritz if you can 🙂 While our only entertaining this summer will likely be small family gatherings, I’m looking forward to using these delicious recipes whether it’s just for two, four or in the future, for larger parties! Grilled Prosciutto, Parmesan and Arugula Flatbread

You’ll Need:

  • Your favorite homemade or store bought pizza dough
  • 1/3 of a pound Primo Taglio® Prosciutto
  • 1/3 of a cup Primo Taglio® Parmesan Cheese, sliced using box grater
  • 3 cups of arugula
  • 2 tablespoons of high quality olive oil
  • Ground sea salt to taste

To Make:

Prepare your pizza dough by rolling out into the shape and size you would like for your flatbread.

Heat your grill to approximately 400 Degrees F.

Once heated, place pizza dough directly on grill surface. Grill on each side for approximately 4-5 minutes, until dough is lightly charred or reaches your desired doneness.

Remove flatbread and place on serving platter or board. Drizzle half of the olive oil directly onto the flatbread.

Top with arugula.

Add prosciutto and sprinkle parmesan cheese on top of bed of arugula (can be sliced to your desired thickness, but for me using the largest grate/slice option on a box grater worked best).

Drizzle with remaining tablespoon of olive oil and salt to taste using ground sea salt.

Cut into squares for easy serving and enjoy!

Watermelon Brie Bites

You’ll Need:

  • Watermelon, cubed
  • Primo Taglio® Brie, sliced
  • Arugula
  • Toothpicks to serve

To Make:

To prepare this appetizer, slice brie and cut watermelon into cubes.

Top the sliced brie with a cube of watermelon.

Add one arugula leaf and secure the stack with a toothpick for eating.

Prosciutto Wrapped Cantaloupe

You’ll Need:

  • Cantaloupe, sliced into half moons
  • 1/2 of a pound Primo Taglio® Prosciutto

To Make:

Slice cantaloupe into half moon shapes.

Taking a slice of prosciutto, wrap around the sliced cantaloupe starting in bottom center and continue wrapping until you’ve used the whole slice of prosciutto.

Serve and enjoy!
