Three Plant Based Lunch Bowls with O Organics and Shaws Supermarkets

Meal prepping and me aren’t exactly friends- I am not a huge fan of leftovers so honestly when I do meal prep, I tend to lose steam after a few days of eating the same thing. Recently though I’ve started trying to do some prep for my lunches as it’s usually a pretty hectic time of day between naps and eating for the two kiddos. I found that having something I can easily pull out of the fridge or freezer makes it much easier for me to eat and also make healthier choices rather than waiting until hunger strikes and I grab a bunch of snacks to eat šŸ˜‰

To prep, I wash, chop and prepare lettuce for salads and also chop any vegetables I’d want on the salads and store them in single serving containers. This makes it easy that I can just pull out a thing of salad, add the vegetable toppings and get to eating. Running around after Nicholas and breastfeeding Peter, I have been so hungry by the time lunch hits that I need to add some protein to my salads. Recently I tried O OrganicsĀ® plant based patties and burgers and they make a delicious protein filled addition to my lunch bowls. I’m sharing three different lunch bowl ideas, Mediterranean, Spicy Buffalo and Southwestern inspired, using the patties that I bought at my local Shaw’s Supermarket. Southwestern Lunch Bowl

You’ll Need:

  • Romaine, washed and chopped
  • Shredded mexican cheese
  • Bell pepper, diced
  • Corn
  • Avocado
  • O OrganicsĀ® Patties Black Bean Southwestern Style

To Make:

When meal prepping, prepare romaine by washing, chopping and placing in bowl for easy serving, dice bell peppers and cut corn off cob.

Add romaine to bowl and top with cheese, diced pepper, corn and avocado.

Prepare O OrganicsĀ® Patties Black Bean Southwestern Style according to package instructions.

Place on top of salad and enjoy!

Mediterranean Plant Based Lunch Bowl

You’ll Need:

  • Kale, cut and massaged with olive oil
  • Grape tomatoes, halved
  • Chickpeas
  • Feta Cheese, crumbled
  • Cucumber, Diced
  • O OrganicsĀ® Patties Quinoa & Kale

To Make:

When meal prepping, prepare kale by washing, chopping and massaging in olive oil by hand for a few minutes.

Cut tomatoes in half and dice cucumbers.

Add kale, tomatoes, cucumbers and feta to bowl.

Prepare O OrganicsĀ® Patties Quinoa & Kale according to package instructions.

Place on top of salad and enjoy!

Bunless and Meatless Buffalo Burger Bowl

You’ll Need:

  • Romaine, washed and chopped
  • Celery, diced
  • Blue cheese, crumbled
  • Your favorite buffalo sauce
  • O OrganicsĀ® Plant Based Power Burger with High Protein

To Make:

When meal prepping, prepare romaine by washing, chopping and placing in bowl for easy serving, and dice celery into halfmoons.

Add romaine to bowl and top with cheese and celery

Prepare O OrganicsĀ® Plant Based Power Burger with High Protein according to package instructions.

Place on top of salad, drizzle with your favorite buffalo or hot sauce and enjoy!
