Summer Salad Skewers

It is summer party and barbecue season! We love hosting this time of year because we can be outside in our backyard. I feel like we are in a groove with our friend group in our town now where we all switch off between each others houses for weekend afternoon hangs- the kids play, the parents can enjoy some wine and it makes for an all around more fun afternoon!

Whether you are the hostess or bringing something to a friend’s house, the Summer Salad Skewers in this post are a perfect summer appetizer! I love them because they look really cute, have refreshing summer flavors and for parents who may need to eat things quickly with one hand ;), they are easy to eat! I made three variations- Watermelon & Feta, Tortellini Pasta Salad and Caprese Skewers. If you have another summer salad you love, you could try making it into a skewer version too. Here are the ingredients for my three Summer Salad Skewers!

Watermelon & Feta Salad Skewers

You’ll Need:

Watermelon, cubed

Feta, cubed,

Arugula

Balsamic Glaze, optional (I love the one from Trader Joe’s)

To Make:

On a skewer or decorative toothpick, stack cubed watermelon, feta and a few leaves of arugula. Once assembled, drizzle with balsamic glaze.

Tortellini Pasta Salad Skewers

You’ll Need:

Tortellini, cooked

Mini mozzarella balls

Roasted red pepper, sliced,

Artichokes, quartered

Salami

To Make:

On a skewer or decorative toothpick, assemble by stacking desired amount of tortellini, mozzarella, sliced red pepper folded, artichokes and salami. Assemble on platter and serve. I like to use multiple tortellini per skewer.

Caprese Salad Skewers

You’ll Need:

Mini mozzarella balls

Cherry tomatoes

Basil leaves

Balsamic glaze, optional

To Make:

On a skewer or decorative toothpick, stack mozzarella balls, cherry tomatoes and folded or sliced basil leaves to taste. Once assembled, drizzle with balsamic glaze as desired.
